White beans for the weekend

In celebration of the United Nations International Year of Pulses (commonly known as beans or legumes), and the arrival of the first gray day of fall, I thought we would start the weekend off right with a simple and flavorful white bean stew.

This Cantabria Stew layers creamy white beans with cabbage and potatoes and every kind of delicious pork product you can think of (chorizo, morcilla, ribs, etc.), creating a hearty stew that is sure to satisfy.

Or, if you’re not quite ready to fully surrender to heavy, cold-weather dishes, try this somewhat lighter option of Spanish white beans with clams, which is perfect in any weather, and for any appetite.
