Baked Canary Islands Bananas / Toya Legido – ICEX

I bought way too many Spanish bananas last week and so I ended up spending the weekend making banana smoothies, banana pancakes, banana bread and otherwise eating this fantastic produce from the Canary Islands.

I also decided to branch out from my usual (and delicious, I might add) list of things to do with bananas and try something new.

That is where this fantastic recipe for Baked Canary Islands Bananas from Foods and Wines from Spain came in.

Not only was it incredibly simple to make, it was also the perfect choice for one of the first, somewhat chilly days of fall. The spiced notes of cardamom, citrus peel and a touch of rum made the perfect combination for saying the first of many goodbyes to a long, hot Spanish summer.
