This might be the simplest salad you eat this summer (or maybe not, I ate a Spanish tomato for a snack this afternoon, whole like an apple and just sprinkled with salt), but you definitely won’t forget it.

Summer fruit like plums, apricots and watermelon work great, as do peaches, nectarines and paraguayas. Then, just combine their sweet flavors with the enticing aromas of fresh mint, a squeeze of refreshing lime juice, and a drizzle of Spanish olive oil.

If you’re feeling daring, you can even try adding a tiny pinch of sea salt or a dash of cayenne pepper… and voila!
