It’s that time of year again, when estadounidenses from all over the globe break out their mini American flags and give thanks for one of the few things that everyone from a country as diverse as the United States seems to have in common: BARBECUE!

Yes, it’s July 4th today, which can only mean one thing, that it’s time to break out the grill! No matter where you are in the world, this annual holiday is the perfect excuse to grill up some meat, poultry or sausages, corn, potatoes, artichokes or other veggies, or even some delicious fish.

Spain of course is no stranger to the art of grilling, which is an important culinary technique here, and particularly in northern Spain. If you don’t believe me, just ask Spanish grill master Bittor Arginzoniz of Michelin-star Etxebarri restaurant in Basque Country, which is currently ranked the 10th “Best Restaurant in the World” on the prestigious Restaurants magazine ranking.
