Summer fruit crumble!

I tend to get over-excited when summer fruit season arrives, filling my shopping basket to the brim with what are invariably more peaches, apricots, cherries, nectarines, plums and the like, than I could ever hope to consume before they go bad.

Anyway, after the first half-dozen or so pieces of these deliciously aromatic fruits have been gobbled down, I usually start to wonder what I’m going to do with the rest of them. The answer, of course, is delightfully simple and equally delicious: bake!
