Delectable Spanish rice recipes!

Stuffed eggplant with prawns and bomba rice / Toya Legido – ICEX

While we’re on the topic of delicious Spanish rice, I figured why not start the weekend off right with a couple of mouthwatering rice recipes from Foods and Wines from Spain.

The first of these three recipes, Stuffed eggplant with prawns and bomba rice, pays homage to the type of rice mentioned in Wednesday’s post The bomba.

The second, Calasparra rice with oyster mushrooms and green asparagus, is a tribute to PDO Calasparra, which incidentally was first region ever to attain a geographic denomination of origin for rice.

And the third features a culinary challenge created by Spanish chef and vegetable guru Enrique Martínez in the form of Creamy artichoke rice with clams and Manchego cheese.

Of course no matter which dish you choose to make this weekend, don’t forget to wash it down with a glass or two of sensational Spanish wine.
