Every year when the winter holiday season rolls around, I find myself eagerly looking forward to the prospect of consuming large amounts of Spanish Cava.

Delighted with, frankly, everything about this Spanish bubbly, I invariably ask myself why I don’t make a point of consuming copious amounts of this quality sparkling wine year-round.

Well, this year I’ve been making good on my promise! After all, there is so much variety to be found within Denomination of Origin Cava (the only Spanish wine designation not tied to only one specific geographic area), that it would be hard to get one’s fill of it.
