A treasure in the dirt / Juan Manuel Sanz – ICEX

Spanish truffle season is underway and so there’s no time like the present to start enjoying the wonderful and singular Spanish Tuber Melanosporum, or black truffle.

While these gastronomic treasures were once found exclusively in the wild, demand for black truffles or “the black diamond of gastronomy”, led to the plantation of so-called truffle farms.

Interestingly, the world’s first truffle plantation was established in the province of Soria (Castile-León) in the 1960’s, and these delicacies are now also widely cultivated in Teruel (Aragón), and Navarre, among other places.

In any case, whether wild or cultivated, truffle hunting (with a trained truffle dog) is a culinary adventure that you won’t soon forget!
