If you missed the live streaming of the International Tapas Competition in Valladolid on Monday night – in which the twelve international chefs participating in this year’s edition of the ICEX Training Program in Spanish Gastronomy competed to make the best tapa – then not to worry! The winner of this year’s competition was chef Teo Jun Xiang of Singapore, for his tapa entitled 3 en 1. Arroz zamorano, chorizo con patatas y huevo. This tapa, which he created during his three-month work experience at Michelin-starred restaurant La Botica de Matapozuelos in Castile-León, was an all out tribute to Spanish pork, and more specifically, to three traditional dishes: Arroz a la Zamorana, huevos con chorizo y patatas and croquetas.
In addition to Xiang, who won a trip to next year’s edition of Madridfusion, two nights at a Parador hotel and a chef’s jacket designed by Devota & Lomba; the competition’s second and third place winners were Denise Lio Fan Ti of Taiwan for her tapa A Rose Negro, and Irish chef Cormac Withero for his tapa entitled Aventura de Bacalao, respectively.
