It is finally fall, and while the weather is getting slightly chillier in the evenings and mornings, there is still plenty of warm sun to be had and enjoyed during the day. Therefore, while my palate is anxiously awaiting the hearty soups and stews of winter, the rest of me isn’t quite ready to take that leap.

Fortunately, there is hope! Spanish legumes are so versatile that not only are they used to fuel some of this country’s most wonderful winter stews, but they are also delicious served cold in salads. There is also a wonderful middle ground of recipes using Spanish beans that are perfect for this lovely fall weather.

Some ideas to try for the coming weeks are these three delicious dishes made with Spanish legumes:

Tolosa red beans with vegetables

Spanish white beans with clams

Catalan sausage with white beans

Happy weekend!
