It is finally fall, and while the weather is getting slightly chillier in the evenings and mornings, there is still plenty of warm sun to be had and enjoyed during the day. Therefore, while my palate is anxiously awaiting the hearty soups and stews of winter, the rest of me isn’t quite ready to take that leap.
Fortunately, there is hope! Spanish legumes are so versatile that not only are they used to fuel some of this country’s most wonderful winter stews, but they are also delicious served cold in salads.
