Pedro Ximénez. Two proper nouns that have soothed, warmed, comforted and brought joy to bodies, minds and souls for centuries.
This white Spanish grape is one of the main varieties in Andalusian DOs Jerez-Xérès-Sherry y Manzanilla-Sanlúcar de Barrameda, Malaga, Sierra de Málaga and Montilla Moriles. The grapes are dried in the sun and turned into sweet, wonderfully complex and mahogany colored wines that are both soft and sweetly enveloping on the palate.
Pedro Ximénez is also the star of the show at some Spanish wineries like Bodegas Robles, an all organic winery in the province of Córdoba whose PX (the shortened versión of Pedro Ximénez) wines have been taking the world by storm. In fact, most recently, the winery’s Selección de Robles Oro 1927 was ranked fourth on the World Association of Writers and Journalists of Wines and Spirits’ list of the “Top One-hundred Wines of the World”.
