May 1st is a holiday in Spain and many other countries (International Worker’s Day), and since it conveniently falls on a Friday this year, there is no better time than now to start planning a springtime long weekend in the wonderful Spanish city of Cáceres.

Not only was this incredible and historic city in Extremadura declared a UNESCO World Heritage City (and once you’ve caught a glimpse of its magnificently preserved historic district you’ll know why), but it is also a gastronomic mecca, where top Spanish products like pimentón (Spanish paprika), Ibérico pork products, local cheeses like the famed Torta del Casar and wonderful produce, mingle seamlessly with both traditional and avant-garde cuisine.
