Yes, yes, we know… potatoes are good in anything. These delicious and highly versatile tubers are delicious in recipes or on their own, and can easily be enjoyed steamed, boiled, baked, fried, mashed or any other way you can think of. They are also delicious complements to any soup, stew, roast or meal.
In fact, it often seems like there’s nothing that the potato can’t do. Not only is it a traditional ingredient in the most humble of dishes, it is also a wonderfully transformable and adaptable tool for the most innovative and avant garde chef.
In celebration of the potato’s most agreeable nature, I though I would share what is perhaps the most traditional and classic Spanish recipe using the potato, as well as an avant garde interpretation of this cooperative tuber from Spanish culinary mecca elBulli itself.
