Even though plates heaped with a wide variety of fish and seafood often conjure thoughts of sitting on a  beach basking in the summer sun, the winter months are when one can truly find a dizzying array of incredible shellfish and other creatures from the sea available at the market. Of course, don’t get me wrong, these products are fresh and good year-round in Spain, but there is something about winter seafood that really catches the eye and the palate.

During the coldest months, these products make excellent editions to a wide variety of soups, stews and other rich and hearty dishes.
