The first Monday in September was Labor Day in the United States, a day that generally symbolizes the end of summer and a return to work, school and “real life”. It is also a day given over to barbecues and getting together with family and friends to celebrate the lingering warm weather and mark the end of those lazy days of summer.

Grilling is important in Spain as well, whether it’s for the preparation of a casual meal with friends, or an avant-garde feast at a world-famous restaurant like Asador Etxebarri.
