In addition to watermelon, melon is another thirst-quenching and delicious Spanish summer fruit that is great for beating the heat.

Melon is also extremely versatile, and whether eaten alone and raw, or cooked into any number of fantastic dishes, or served up salty or sweet, it makes a wonderful addition to a wide array of summer meals.

Try any one of these three, very different recipes using Spanish melon:

Cold melon soup (Gazpacho de melon)

Little melon balls with Serrano ham (Bolitas de melón con jamón Serrano)

Wild rabbit ballotine with grilled melon (Ballotina de pierna de liebre con melón a la parrilla)
