Madrid Fusion’s Final Push

The last day of Madrid Fusion 2014 gets up and running this morning with a roster of international chefs representing this year’s two guest regions: Flanders and the Andean Axis.

Chefs from Peru, Chile and Bolivia are first up on the agenda with promising talks addressing Avant garde cuisine in their countries. Later, after hearing from culinary wizards from Flanders, Italy and of course famed Peruvian gastronomes Gastón Acurio and Diego Muñoz, the morning’s highlight will surely be the talk by former ElBulli chefs now representing the ElBulli Foundation, Eduard Xatruch and Oriol Castro, on 50 Questions that will Change the Way we Understand Cooking, Decoding the Culinary Genome.

Then, this afternoon, Avant garde cuisine once again gives way to more traditional Spanish culinary concepts at Saborea España (Tasting Spain), with presentations geared to the Spanish food-lover on topics such as Legumes (Marcos Morán) and Traditional Desserts (Paco Torreblanca), among others.
