I could devour a whole Spanish avocado in one sitting, as often as three times a day. I absolutely love them, especially simply sliced on a piece of toast in the morning with a rub of garlic and a pinch of salt.

Creamy, flavorful and delicious, avocados are good on their own, or turned into any number of delicious dishes and sides.

Spanish avocado production is mainly centered in Andalusia, followed by the Canary Islands. But this wonderful fruit is enjoyed all over the country.

Try these two simple recipes for a fantastic taste of Spanish avocado:

Toast of avocado, tomato seeds and anchovies (Tosta de aguacate, semillas de tomate y anchoas) and Galician lacon, mango and avocado salad (Ensalada de lacón gallego, mango y aguacate).
