With the festival of San Fermin still going strong in Navarre, it seems only fitting to round off the week with a couple of traditional recipes from this bountiful region.
Among other things, this region is particularly famous for its wonderful vegetables. Asparagus, artichoke, peppers… the list of delicious vegetables from Navarre’s gardens goes on an on.
What better way to taste these products all in one dish than with the typical Menestra de Verduras? This vegetable medley is a classic from this region that is available year-round, though adapted to reflect what’s in season at any given time.
