The name of Spanish chef Josean Martínez Alija has been on the tip of everyone’s tongue lately, not only thanks to his award winning, Michelin star restaurant, Restaurante Nerua, located in Bilbao’s Guggenheim Museum, but also due to the release of his new cookbook, Muina.

This young, Avant-garde chef combines the best of Spanish modern, haute cuisine and culinary techniques, with a respect and dedication to using as many locally sourced, traditional products as possible, transforming them into innovative dishes where – though the technique is important – the product is key.

This is a philosophy that Alija hopes to share with the publication of his new book, Muina, which not only focuses on his roots as a chef, but also on his environment and his respect for the products that he uses in his kitchen.
